Railroaders' Cookbook - Greatest Hits Volume I

                                    
Railroad mealprep is a serious painpoint in my house.  My husband tries to be as cost efficient as possible and loves a good leftover.  Soooo, we usually don't have a problem, as long as I keep cooking...  but when I hit a lazy streak, order out a few days (weeks) in a row, next thing I know all he's talking about is food.  "I need food for the road."  "What am I going to take to work with me?" Ughhh.  So I'm going to try my best to compile a few of our greatest hits right here (with original sources noted as well because let's face it, this is all borrowed).  I'm not going to post everything I make, but these are the leftover favorites that travel well, and honestly, it's pretty much manfood.   

And while we're on the topic, it's probably a great time to mention my Railroaders' favorite travel companion, the HOTLOGIC MINI.  This thing comes with a standard power plug or a car charger.  He loves it and it heats his meals as well as a microwave (it just takes way longer from what I understand). You can find it on Amazon of course.

Homemade Hamburger Helper - Countryside Cravings
My RR LOVES this one.  It's way better than the old box we all remember as kids.  I don't add the cayenne because my daughter absolutely can't deal with anything remotely spicy, and I'm sure I add way more cheese than this one calls for (personal preference).

One Pan Garlic Chicken Pesto Pasta - Tasty
This is another favorite.  We pretty much stick to the script on this one, and the more cherry tomatoes the better!

Creamy Parmesan Garlic Mushroom Chicken - The Recipe Critic
We LOVE this one!  We double the ingredients to make extra sauce because it's so good, and makes it way better as a leftover.  I'll usually make some penne to go under it.  I don't like leftovers and even I will eat this one again.

Ground Beef and Rice Casserole - The Cozy Cook
This one hasn't been in rotation for long, I just made my way back to the "cream of" soups.  But it's really simple, cheap, fast, and in my book that makes it a winner.  Throw in mushrooms and I'm in.  

Classic Beef Meatballs - Martha Stewart
These meatballs are awesome.  And my RR LOVES spagetti.  He's pretty specific about his spagetti sauce (store bought) and I pair that with these meatballs, some angel hair pasta, and he's happy as a clam. Seriously. 

Broccoli Cheese Rice Casserole - Spend with Pennies
This is my favorite.  I am in love with anything Broccoli Cheese.  Add rice and I'm in.  And for some extra protein for the old man I'll add in some baked chicken breast.  

Enchilada Casserole - Taste And Tell
This enchilada casserole is AMAZING.  But, I make my own enchilada sauce.  This recipe is so good, it's probably just fine with any enchilada sauce but I'm native South Texas so I gotta be Puro Tejas and brown my own flour (haha!).  Either way, it's a crowd pleaser and it travels well.  Don't forget the mucho cilantro.  

Balsamic Grilled Chicken with Roasted veggies and rice - Rachel Cooks
This meal is my favorite right now, and my RR certainly doesn't mind taking it on the road with him either.  I marinate a few chicken breasts in this amazing balsamic marinade, then I grill it.  I slice and roast some veggies in the oven (squash, cherry tomatoes, zucchini, potatoes, asparagus, whatever I can find) in either extra virgin olive oil or butter.  Then I make some steamed white rice.  That's it.  I could seriously eat this every day.  So good.

A little help from Alexa

If you're anything like us, we have Amazon Echo devices throughout our home.  We've been working on making our home smart one room at a time, one light at a time, one TV at a time... One of my favorite ways to make Alexa work for me is in my child's room.  I'm so tired of the daily argument about bath time and bed time, and this RR mama will take all the help she can get.  She currently has a kids echo in her room which comes in very handy.  Here are a few of the things I use my Alexa devices for to help run this Railroad family's home! 1. Announcements! If you're not already using this feature, you are missing out.  My house isn't big, but I do not enjoy walking from one end of it to the other to tell my kid to come to dinner.  So I use this announcement feature to call my family to dinner! Here's how it works:  Tell Alexa - Alexa, Announce DINNER'S READY!   And she will announce it to all of the other Alexa devices on the account, including phones
